classics

Today I made a couple of classics that I love.

Good Old Fashioned Pancakes
1 1/2 cups all purpose flour
3 1/2 tsps. baking powder
1 tsp. salt
1 Tbsp. white sugar
1 1/4 cups milk
1 egg
3 Tbsp. butter, melted

In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.


Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

Peanut Butter Cookies
1 cup smooth peanut butter
1 cup white sugar
1 egg

Preheat oven to 350. Mix all ingredients together using an electric mixer. Line a cookie sheet with parchment paper and set aside. Once the mixture has formed a nice dough, roll the dough into 1 inch balls. Place on the cookie sheet 1 inch apart and press with a fork (criss cross style). Bake for 10 minutes and let cool. Enjoy! I always add a tad (1tsp.for med batch 8-10)of pure vanilla extract. Makes pancakes more Yummy!
