spaghetti pie

This is a yummmy and simple recipe from my good friend Anna, enjoy :)

Spaghetti Pie

8 oz cooked spaghetti
2 Tbs olive oil or butter
2 large eggs, beaten
1/2c and 2 Tbs Parmesan cheese
1 c. ricotta cheese
1 c. spaghetti sauce
1/2 c. shredded mozzarella

Preheat oven to 350. Toss hot spaghetti with oil. In a small bowl combine eggs and 1/2 c Parmesan. Stir into spaghetti. Pour spaghetti mix into lightly greased 10 inch pie pan and form a crust. Spread ricotta over crust. Top with sauce. Bake uncovered for 25 minutes. Top with mozarella. Bake 5 more minutes. Remove from oven and sprinkle with remaining 2 Tbs Parmesan cheese. Cool for 10 minutes before cutting into wedges.
