Lately I've found myself with an abundance of green beans and tomatoes and wondering what the heck I should do with them. Here are some answers that I found (and loved):
my favorite salsa recipe: Jen's Fresh and Spicy Salsa (I use half the amount of hot sauce and jalapenos.)
Fresh Green Beans a la The Pioneer Woman
All of these are fairly simple recipes and so delicious! The salsa is amazing because it is so fresh and just the right amount of spicy for us, I also puree it in the food processor because a certain someone is afraid of tomato chunks. The tomato sauce recipe is great if you have a lot of tomatoes (it takes 2 lbs. but I doubled it because of the amount that I had) and want to try your hand at your own pasta sauce. I used red and yellow tomatoes, both big and cherry sized. I also added some sweet peppers we had and the blend was incredible. It's currently resting in my freezer until I need it. And the green beans, oh those beans!! Mmmmm that Pioneer Woman sure knows how to make some delicious green beans. I've made them twice and we've gobbled them up real quick!
Here are the other things I made today:
This is one of my favorite fall treats. They are so tasty and not so bad for you. Highly recommend them!
These are for that special poochie in your life. The recipe calls for bacon fat for the bacon flavor and I'd been saving up some for these treats and decided it was high time I made them. They are Dixie approved!
