Black Bean and Corn Salad
- 3 limes (lime juice)
- 1/2 cup olive oil
- 1 clove garlic, minced (or my version, 3 cloves)
- 1 1/2 cups frozen corn kernels (or 4 ears)
- 2 (15 oz.) cans black beans
- 1 avocado peeled, diced
- 1 red pepper, chopped
- 2 tomatoes
- 6 green onions, thinly sliced
- 1 tsp. salt
- 1/8 tsp. cayenne pepper
2. In a salad bowl, combine everything else. Shake dressing and pour over salad. Stir salad to coat veggies and beans with dressing.
